Greek Meatballs

These filling Greek meatballs are a crowd favorite that can be served all year round. Great for an outside summer dinner or a cozy winter meal. This recipe will make about 16 meatballs and can feed 4-5 people, depending on how hungry you are. If you are cooking for yourself, these are a great meal prep to have on hand for a quick nutritious meal. I prefer to serve these with rice, homemade tzatziki and hummus, and pita on the side.

Meatballs Ingredients:

  • 1 lb. of ground beef

  • 1/2 red onion, finely minced

  • 6 mint leaves, chopped

  • ¼ cup parsley, chopped

  • 2 cloves of garlic, minced

  • 1 piece of white bread

  • 1 egg

  • 1 Tsp oregano

  • 2 Tbsp extra virgin olive oil

  • Dash of salt

  • Pepper

Vegetable Medley to Serve with Meatballs:

  • 1 cucumber, quartered

  • 1 tomato, chopped

  • ½ red onion, finely chopped

  • ½ green pepper, finely chopped

  • 1 cup kalamata olives, halved

  • Chopped feta to serve

Instructions:

  1. Mix together in a large bowl (with a lid if have) 1 lb. of ground beef, a half a red onion finely minced, chopped mint leaves and parsley, minced garlic, one egg, one piece of a white bread ripped into small pieces, dried oregano, and 1 Tablespoon of extra virgin olive oil. Add in a dash of salt and some pepper and then mix the mixture thoroughly together.

  2. Let the mixture sit in the refrigerator for at least an hour before forming the meatballs, to make them easily bind together.

  3. While the mixture sets you can prep the vegetables to serve with your meatballs. Slice then quarter the cucumber, finely chop the other half of your red onion and half of a green pepper, chop up a tomato, and cut about a cup of kalamata olives in half (or more if you prefer). Set aside until it’s time to serve.

  4. Feel free to skip this step if you are serving without rice, but if you are like me and prefer these served with rice you can start on the rice before forming your meatballs.

  5. To form the meatballs use a little over a Tablespoon of the mixture for each meatball.

  6. Once they are formed, heat a Tablespoon of olive oil in skillet on medium high heat and add in your meatballs. Cook them on all sides for about 8-10 minutes.

  7. Plate the meatballs with the vegetables you prepped, rice, and top with chopped feta. To make the meal even more decadent serve with this delicious homemade Tzatziki and homemade hummus with a side of pita.
